The downside to have a round pipe extended down is that you lose a little bit of prime real estate. The normal way to do this is by using a piece of 3" round aluminum dryer vent, with a bend bringing it down to grate level. ![]() Based on other smokers I have used, I knew this would keep the heat flowing across the grates better, rather than bottling up at the top of the cooking chamber. Same goes for adding a seal around the FireBox Side Air Inlet/Clean out door when i discovered that controlling inlet air was sketchy.Įxtend Exhaust Stack Down to Grate Level: One the most important mods in my book was to extend the exhaust stack down to about 1" above grate level. I added the lavalock nomex gasket to the FireBox and Cooking Chamber area after reading and seeing the leakage with y own eyes. The Longhorn Reverse comes with removable baffle plates plus a different chimney position which changes the movement of the smoke from going straight through the smoker to being directed under the baffles and back over the meat before exiting through the smokestack. ![]() What is the difference between the Longhorn and the Longhorn Reverse? We still like to get it going with some charcoal though. The firebox is about 14 inches long so you can fit pretty large logs into it for a good low and slow burn. Is the firebox big enough to smoke with wood only? You can use wood only, charcoal only, or a combination of both. Can you use wood to smoke in the Oklahoma Joe’s Longhorn Reverse? Even the grates themselves are easy to clean being that they’re durable, porcelain-coated wire. And, the fact that the baffle plates are removable means that cleaning the usually difficult reverse flow interior isn’t a tough chore. In terms of cleaning, the large, swing-open firebox door makes it really easy to clean out the ash. After getting it going, we simply chucked in some small logs for that extra smokiness. And, because the firebox is so large, you can use pure wood to smoke with instead of charcoal. ![]() This helps to keep the charcoal tightly packed for a more efficient burn. There’s also an extra bung so you can install another temperature gauge closer to the firebox if you want the extra feedback that provides.Īlso included with the Longhorn Reverse is a high-quality charcoal basket. And, the built-in thermometer we found to give a pretty accurate reading. They’re easy to slide to make the small adjustments you need for precise temperature control. Starting with the dampers, we were impressed. And, Oklahoma Joe have made things as easy as possible. But, for your effort, you can create some of the best smoked meats with a well-developed smoke profile. Offset smokers are known for being more difficult to use then most other types of smokers.
